Recipe 1: Cabbage Croquettes

Crispy, golden, and packed with flavor – these cabbage croquettes are the ultimate chameleon. They’re perfect for dinner, snacks, or even breakfast the next day (if they last that long!).

Ingredients
  

  • 1/2 medium cabbage chopped
  • 1/2 cup whole milk
  • 1 cup water
  • 1/2 cup flour
  • 1 1 carrot finely chopped
  • 1/2 yellow onion finely chopped
  • 2 garlic cloves minced
  • 2 tbsp butter
  • 2 eggs beaten
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1.1/2 cups Panko breadcrumbs
  • 1/2 tsp black pepper for Panko
  • Avocado oil or air fryer spray for skillet frying

Dipping Sauce Ideas

  • Sour cream
  • Spicy mustard
  • Soy sauce
  • Garnish with green onions

Instructions
 

  • In a medium pot, combine chopped cabbage, milk, and water.
  • Bring to a simmer and cook for 7-15 minutes until the cabbage softens. Drain well.
  • Transfer cabbage to a bowl and mix with flour.
  • In a pan, heat butter and sauté onion, garlic, and carrot until softened, about 5 minutes.
  • Add the sautéed veggies, eggs, salt, black pepper, and red pepper flakes to the cabbage mixture. Mix well.
  • Form into small patties (about 2 inches wide).
  • Dip patties into seasoned Panko breadcrumbs, coating all sides.

If Using Air Fryer

  • Spray with oil and cook at 400°F for 15 minutes, flipping halfway.

If Using Skillet

  • Heat avocado oil over medium heat and fry each croquette until golden brown, about 3-4 minutes per side.
