Ingredients
  

  • 2 tbsp unsalted butter plus extra for greasing ramekins
  • 2 tbsp tablespoons granulated sugar plus extra for dusting
  • 2 ounces dark chocolate (70% cocoa) chopped
  • 1 egg yolk
  • 2 egg whites
  • 1/8 tsp cream of tartar
  • 1 tbsp cocoa powder optional for dusting

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease two small ramekins with butter and dust with sugar, ensuring even coating.
  • Melt the chocolate and butter together in a heatproof bowl set over simmering water (double boiler). 
  • Stir until smooth, then remove from heat and let cool slightly.
  • Stir the egg yolk into the cooled chocolate mixture until combined.
  • In a separate clean bowl, beat the egg whites with cream of tartar until soft peaks form.
  • Gradually add the sugar and continue beating until stiff peaks form.
  • Gently fold a third of the egg whites into the chocolate mixture to lighten it, then fold in the remaining egg whites, being careful not to deflate the batter.
  • Divide the mixture evenly between the prepared ramekins.
  • Run your thumb around the edges of the batter to create a clean rim; this helps the soufflé rise evenly.
  • Place ramekins on a baking tray and bake for 12–15 minutes, or until the soufflés have risen and are set on top but still jiggly in the center.
  • Serve immediately, dusted with cocoa powder if desired.
